Creamy Chicken and Mixed Mushrooms on Toasted Bloomer

  • 4 Slices of good quality crusty loaf
    200ml single cream
    red wine or brandy
    cloves of garlic – crushed
    Approx 150g
    mixed mushrooms
    Approx 250g
    leftover cooked Chicken
    sprigs of thyme
    tbsp olive oil
    Salt and pepper

Cooking time: 10 minutes
Preparation method
  • Slice the mushrooms and fry in 2 tbsp of the olive oil over a medium heat until they are coloured then add the garlic and thyme and cook for a further minute.
  • Add the alcohol and fry for 2-3 minutes.
  • Add the leftover chicken and once this is warmed through add the cream. Season to taste.
  • While this is thickening up brush the bread with the remaining olive oil and toast on both sides under the grill.
  • Once the bread is toasted spoon over the creamy chicken and mushrooms.
  • Serve as it is or with a green salad.
