Creamy Chicken and Mixed Mushrooms on Toasted Bloomer

Simply satisfying, this creamy dish is rich and full of flavour.

Cooking Time: 10 minutes

Serves: 4



4 Slices of good quality crusty loaf

200ml single cream

25ml red wine or brandy

2 cloves of garlic – crushed

Approx 150g mixed mushrooms

Approx 250g leftover cooked Chicken

2-3 sprigs of thyme

3 tbsp olive oil

Salt and pepper


1. Slice the mushrooms and fry in 2 tbsp of the olive oil over a medium heat until they are coloured – then add the garlic and thyme and cook for a further minute.

2. Add the alcohol and fry for 2-3 minutes.

3. Add the leftover chicken and once this is warmed through add the cream. Season to taste.

4. While this is thickening up brush the bread with the remaining olive oil and toast on both sides under the grill.

5. Once the bread is toasted spoon over the creamy chicken and mushrooms.Serve as it is or with a green salad.
