What the Judges Said:

Pork Shoulder: "This is a handsome looking joint. The generosity of the crackling invites you in. The meat is wonderfully moist. Finding the right adjectives is difficult. The meat is sweet and rich. It is delicious. The texture of the meat, along with the overall flavour, is without fault."

Whole Chicken: "A lovely looking chicken, this is glistening and succulent when carved. It looks appetising. The skin is crisp but not fatty. This is clearly a high quality bird. The flavour is rich and moreish, the white meat is tender and judges were particularly impressed by the almost gamey freshness and creaminess of the dark meat. The flavour lingers, is very natural and is incredibly well balanced."
